DRINK OF THE WEEK: Seven’s Desert oasis

When we first checked out Seven Bar & Kitchen in the ever funkier (and some would say drunkier) Funk Zone, it was the early days. Things were quiet in their location, but the gang hoped that things would pick up. To say they had picked up when we returned there one weekend ago would be understating it. To say, “Holy smokes, this place is overflowing with people and I can barely get to the bar or hear myself think!” would be more like it.

So, they’re doing well. When we did get to the bar, we met none other than Andy Davis, formerly of Relais de Paris and EOS, and lover of all things busy. He likes a bar that keeps him on his toes, and that’s Seven Bar.

(By the way, Seven Bar now offers a Whiskey Wednesday, with flights and cocktails starting at 6. Check it out and try some rare bourbons.)

We delved into the cocktail menu and tried a Desert Oasis, one of the most popular drinks at this place. It’s a mix of tequila, Aperol and grapefruit bitters, but no grapefruit juice. That’s because the Aperol — coupled with a spritz of Sprite — gives that impression anyway. It’s a light, summery cocktail to be enjoyed at the bar or out back on the patio with Dad this Father’s Day. And, if you haven’t guessed, it’s our Drink of the Week.

1 1/2 ounces blanco tequila (preferably Carreta de Oro Blanco Tequila)
1/2 ounce Aperol
1/2 ounce lime juice
2 dashes Fee Brothers Grapefruit Bitters

Lemon-lime soda (preferably Sprite), to top

Combine tequila, Aperol, lime juice and bitters in shaker with ice. Shake and pour into Collins glass. Top with soda. Garnish with grapefruit peel.

Yield: 1 drink
